Although simple and fast, these cookies are scrumptious! Sometimes it is not all about how much time goes into a recipe, it is how creative you get with the ingredients! This time around I used semi-sweet chocolate chips and walnuts but you can use a whole variety of nuts and chocolates for this recipe. Try different dark chocolate chips, white chocolate chips, hazelnuts, dried cranberries or pecans for example. What I am saying is that some recipes have endless opportunities and that you should always be switching it up just to make life a bit more interesting!

Makes 36 cookies

Ingredients

2/3 cup           Unsalted butter at room temperature

1 cup                Packed brown sugar

1                         Egg

1 ½ cups         Rolled oats

1 cup                All purpose flour

½ tsp                Baking powder

½ tsp                Baking soda

¼ tsp                Salt

¾ cup               Semi- sweet chocolate chips (see above for more options to tickle your taste buds)

½ cup               Chopped Walnuts (see above for more options)

Alternative topping, if you are feeling adventurous!

2 tbsp               Walnuts, preferably the same kind as in the recipe

½ tsp                Cinnamon

½ tsp                Nutmeg

1 tsp                  Orange rind

3 tbsp               Honey

You are going to want to first want to grease two baking sheets and preheat the oven to 375 degrees F. In the first bowl beat together the butter and brown sugar until it is nice and fluffy. Add egg next just until incorporated. In the second bowl, mix together rolled oats, flour, baking powder, baking soda and salt. Add this mixture into the butter mixture in 2 additions, mixing until incorporated. Use a spatula to scrape the rest of the mixture and fold it in with the rest. Fold in the chocolate chips and the walnuts.

If you are going to try the amazing topping suggested above then mix all four ingredients in the order of the recipe above with a fork, mixing after each addition.

Once the mixture is ready, put the batter in palm sized drops on the baking sheets about 2 inches apart from each other. If you are trying the topping than this is the time to put a small sized amount on each cookie. Leave the cookies in the oven for 8-10 minutes, checking in the last few minutes. Once they begin to brown take them out of the oven and let cool for 3 minutes on the pan. Transfer to rack for 5 more minutes and enjoy!
